What happens when a physician turns to food to rebuild her own health and challenges how we think about chronic disease in the process?
If there’s one idea that threads through this week’s episode of Longevity.Technology UNLOCKED, it’s that we may have been asking the wrong question about chronic disease all along. Instead of asking how to treat it, what if we asked how to rebuild the conditions that allow the body to function in the first place?
Refocusing our lens from intervention to infrastructure sits at the heart of the conversation with Dr Terry Wahls, a clinician-researcher whose work on diet and autoimmune disease is as controversial as it is compelling. Her story doesn’t begin in a lab, but in a wheelchair.
Years after being diagnosed with secondary progressive multiple sclerosis, Wahls found herself “in a tilt recline wheelchair, clearly going downhill,” despite following the best available treatments. What followed wasn’t a rejection of medicine, but a widening of its lens into nutrition, metabolism and the overlooked biology of everyday life.
What she discovered would eventually reshape not only her health but her entire philosophy of care.
The moment food stopped being “supportive”
Wahls describes her turning point with surprising humility. After years of experimenting with supplements and functional medicine approaches, the breakthrough came from rethinking something ordinary.
“I had this big aha… what if I redesigned my Paleolithic diet based on this long list of supplements that I’m taking?” she said. What sounds simple on paper turned out to be transformative in practice. “That’s when the magic happened. That’s when the speed of my recovery was just stunning.”
Within months, she moved from being wheelchair-bound to walking. Then biking. Then completing an 18.5-mile ride. For a condition long considered irreversible at that stage, the implications were hard to ignore, even if they were harder for the medical establishment to accept.
However, Wahls is careful about how she frames that transformation. She doesn’t position diet as a cure. Instead, she reframes the role of medicine itself. “I am not treating your disease,” she explains. “I am working on helping your cells work better.”
Gut as a control center, not a side system
Much of that restoration, according to Wahls, begins in the gut. We often talk about the microbiome as if it’s a supporting actor in health, a background system that helps digestion. But the episode makes a stronger claim: the gut is more like a control center, constantly communicating with the brain and immune system in real time.
“The communication between our gut and our brain is really bi-directional,” Wahls notes. That means what we eat doesn’t just fuel us; it informs us and shapes how our immune system reacts, how our brain processes signals, even how resilient we are to stress and disease.
Fermented foods like kimchi and sauerkraut, for example, help “populate helpful microbes,” restoring bacterial communities that modern life – antibiotics, processed foods, C-sections – has steadily eroded.
At the same time, the modern diet may be doing the opposite. “The sugar and white flour and artificial sweeteners harm our microbiome incredibly,” she says, pointing to ultra-processed foods as a major driver of inflammation and imbalance. It’s a stark contrast: one set of foods builds microbial diversity; the other quietly dismantles it.
Fiber, fats and the problem of modern eating
If there’s a recurring theme in Wahls’ framework, it’s that we are biologically out of sync with how we eat. “Our ancestors… [ate] more than 100 grams of fiber every day,” she explains. Today, many people get less than 15 grams. “So we’re starving our microbes.” The gap is ecological. The microbiome depends on fiber the way a forest depends on sunlight. Without it, diversity collapses.
Nonetheless, Wahls resists one-size-fits-all prescriptions. While she emphasizes the importance of fiber-rich vegetables and fermented foods, she also acknowledges complexity. Different genetics, lifestyles and microbiomes mean there is no universal “perfect diet.”
“I don’t know that we fully know the correct answer,” she admits. The uncertainty extends to fats as well, a category long clouded by decades of conflicting advice.
Wahls pushes back against the lingering fear of fat, calling cholesterol “not an evil molecule… a vital molecule,” essential for cell membranes and brain health. The real issue, she argues, isn’t fat itself but imbalance, particularly the skewed ratio of omega-6 to omega-3 fats in modern diets.
A systems view of health
What makes Wahls’ approach resonate isn’t just the specifics of her protocol. It’s the systems thinking behind it. Health, in her view, isn’t the result of a single intervention, but the outcome of multiple, interacting layers: diet, movement, sleep, purpose, environment.
“It really is the whole package of how you choose to spend every moment of your day,” she said. That idea echoes throughout the episode, as both hosts emphasize practical, everyday strategies, small shifts that, over time, reshape the body’s internal environment.
